restaurant. Chicken Parmo Fridays have quickly become one of the most
popular evenings at The Tiger Inn, with guests travelling from York,
Leeds, Harrogate, Ripon and beyond.

What is a Parmo?
A classic chicken parmo is a combination of cheese, chicken and
béchamel sauce. The chicken is flattened, covered in breadcrumbs,
fried until golden. It is topped with a creamy béchamel sauce and a
layer of cheddar and grilled. The dish is served with fries, garlic
mayo and a salad. Chicken Parmesan is typically made with tomato
marinara sauce and mozzarella, while Chicken Parmo is topped with
rich, creamy béchamel sauce and cheddar cheese. Although the dishes
sound similar, they differ in their ingredients, origins and the way
they are traditionally served.
Where did the Chicken Parmo originate?
The Chicken Parmo is most often linked to Nicos Harris, who is
believed to have created it in 1958 at The American Grill in
Middlesbrough. Harris was an American soldier wounded during the
Second World War who recuperated in the North East before settling
there. Some accounts suggest he adapted the Parmo from a dish he
remembered from 1930s America.
Another version of the story credits Marcellino Dinello, an Italian
who moved to Teesside with his wife in the 1960s and opened the
well-known Europa restaurant. While the exact origin is debated, both
stories point to Teesside as the place where the Parmo became
established.
The original Teesside Parmo was known as an ‘escalope parmesan’ and
was usually made with flattened veal or pork rather than chicken. It
was deep-fried, coated in thick béchamel sauce, topped with grated
cheese and then grilled. Over time, the dish evolved into the chicken
version now best known across the North East. Because parmesan hardens
when grilled, cheddar became the preferred topping, giving the Parmo
its familiar rich, melted finish.
